1 or 2 pieces of bread
Svolværpostei
2 rather messy eggs
some good butter on the bread
raw leek, finely chopped
salt, pepper (white/black)

Fry the eggs with the yolks crushed, but not quite finished.

If you live in Norway and haven’t tried Svolværpostei, do, it’s not bad, sort of a cod liver & roe paté, coarser than similar French stuff made from trout etc, but remember, in Norway, many of the best things are what you would probably call “common”. Some of the stuff you buy in supermarkets can be freshened up with pepper, Tabasco etc.

Everyday fare that keeps us out of the operation theatre, at least for a while.

Have a cup of tea, too.
