1 middle-sized onion
7-8 cm leek, finely chopped
¼ sweet red pepper, in pieces
quite a lot of good butter
an even bigger lot of white pepper

Melt the butter, but don’t brown it. Slice the onion and
chop the leek, and add both to the pan. Let simmer slowly 5-6 min. Add the
pepper and let it simmer another few minutes, until the onion is soft and the bell
pepper sort of soft, as you like it.

Serve it as a side dish or on its own. Veggie for life or
for a day – your choice. I think I’ll probably go for the odd day job – but that
sounds pretty sensible to me, eating more vegetables is good for the body and for the environment.
