½ cauliflower
½ onion
3-4 tbsp olive oil
1-2 tbsp water
Dried oregano, a pinch
Dried sage, something similar
A little sweetish salt
Ground black pepper
A few drops of normal Tabasco sauce

Heat the oil, water and herbs in a pan. Add the onion, not too finely cut, pepper and Tabasco. Boil slowly until not quite crisp, not quite soft.

Boil the cauliflower in salted water. Let it drip in a sieve and add to the pan. Crush it as you like, mix everything and add salt, pepper and Tabasco to your own taste.

You don’t have to use any special salt, of course, but the various types do taste differently.
